I'm not sure what I have done but when I enter a category on my homepage all the gallerys within that category display in some utterly random order (they used to be in date order with the most recent at the top)

As much as I try I cant even find an option that covers this in the tools menu.

Hi, you are displaying your categories and galleries by most recent. If you would like to set a different sort order, you can do that easily, just click "display by: position" on your homepage, then click "arrange" to sort the categories. If you enter a category, you will be able to click "sort galleries: arrange" and sort galleries by title, position, date created and date modified, or sort them manually.
