In fact I have been thinking that a 27" monitor is pretty good and I could spend less money on the iMac with the faster processor and maximum RAM ...
Do you think it this a good option ?

The iMac would more than likely be the better deal. The only need for a Mac Pro is for a workstation. For Photoshop and photo editing an iMac would suffice fine.

I have to say this is one thing I don't get about Apple, why so few choices on a high end machine?
Because they have to make "mac versions" so they can charge more for the exact same card flashed with a different ROM. I've seen people who have bought 4870's off of ebay and flashed them a different ROM, saving them lots of money.
If you are going with the iMac, get the i7 model - nearly the performance of the current Mac Pro for 1/2 the cost.

I am expecting to use it with the LaCie 18" as second monitor or/and with the Wacom Tablet.
I think the problem these 27" had at the beginning is gone and they are OK now.
