photoshop canvas sizes

Using photos i take at football games, we create 'posters' for some of the players. (seen here http://www.sorsn-photography.com/gallery/3394469_MKGSM#290282486_oF6DZ)

historically, we've created them at 2000x3000 so that they can be printed at 8x12 (not sure why i liked that size at the time). now i'm wanting to change that so that my customers can order 8x10s and other sizes (without cropping). Can someone tell me what canvas size i need to use in photoshop when creating these?

At 8x10 by 300 dpi, you would have 2400 x 3000 pixels.
