Best size to upload 8x10;8x12; 5x7?

I know the warning are there at user buying time, but two seperate users had purchased 4x6.
When I looked at the order, I saw that two photo were cropped in such a way that part of the subject they wanted was cut off.
My photos ate taken with a 40D, so I get that 2x3 photo. If i crop, I will use a 8x10 or 8x12 crop (what ever fits best).
I searched the forum and saw the advice to leave a little "boarder" room.
My Question: Can I NOT OFFER 4x6 and make the smallest shot a 5x7? If so how?
Question #2: What sizes do you recommend if you crop?
Note: I am just going to buy the 5x7 and send it to the patrons ... unless someone has a better suggestion.

Yeah, I saw that, but when I look at the price I thought it was still available at the minimum price.
