Allowing only CERTAIN prints to be purchased

Hi guys,
I searched and couldn't find anything, but this one kind of bothers me. I wish there was a way to limit what types of prints are allowed to be purchased by our customers. For example, most people that are buying from my site don't know the difference between any of the photo types (matte, glossy, lustre, or this new metallic style). Being so, they go with glossy, because, well, matte *sounds* boring lustre is just unknown, but GLOSSY sounds like it pops, and will look amazing in their home. I don't actually know this is what they are thinking, but it seems to be evident in their purchasing trend.
Is there a way we can limit their choices? Sell only Lustre, or metallic? Give them a message on the page that pops up to buy things. Something that says "Hey, lustre is the best", along the top of the purchase page. It could even be something on our page that just had a box next to each print type where we set prices that, when clicked, just hides the print from being purchased.
I'll be honest, I don't sell a lot of prints, partly because I'm not a professional, but every once in a while I do these random events where I just snap photos of people, and give them a card to look at em. It would be nice if they could As such, I don't talk to them about which kinds of prints are better, etc.
Am I off my rocker trying to limit the consumer choice? Anti-american? Unpatriotic? I figured I would ask and find out.
