Release requirements

If I shoot a portfolio for publication that features people of all ages from private life, and I am not making any money from the published photographs but a non-profit/charity is making money from the sale of say, a book of these photographs, are releases required? Part two to the question would be; how do you obtain releases when you are working a crowd of 40-50 people, and there's no time to stop everytime you make an image? Thanks for any advice in advance.
