Mounted Canvas question

Was hoping some of the Smugmug gurus and/or those who have previously ordered mounted canvas prints could help me out. I'm interested in a print of this photo:
I started off looking at WHCC whom I use for most of my prints and decided on a 20x30 mounted canvas print. However, I could not get it to fit correctly given the 1 1/2 inch space needed on each side - it cut off my boy's butt! I then looked at Mpix as I recently ordered a print - mounted and framed from them - that won great reviews from my mom. I again had a problem getting the 20x30 to look right. This is a uncropped shot from my Canon Rebel XT/350D so it has the correct dimensions for a 20x30 print... I then decided to upload the shot to smugmug and, lo and behold, the 20x30 mount looks perfect!
Before going ahead with this, I was hoping for some advice. How much space is taken up by the wrap? In other words, is it a 1 or 1 1/2 inch per side wrap? I'm a bit perplexed as to why the other labs cut so much of my photo and EZprints does not. Also, should I enlarge the shot in CS3 to 20x30 using the bicubic method or simply upload the jpg file without enlarging? I do not see any method of specifying that this a black and white when ordering - does that cause a problem in terms of how it is printed and on what canvas type? I know it would matter on traditional print paper. There are no options that I can see for lamination as there are at WHCC. Finally, as I have not used EZprints before, any thoughts on color correction options: Auto vs True? And, really finally, any thoughts on this particular photo on a mounted canvas? I've never printed on that medium before.
Thanks in advance!

Would still appreciate thoughts on the color correction options: Auto vs True.
The final shot - cropped and one tiny use of the healing brush.
Thanks a lot,

IMO you need to clone some more sand to the bottom of the photo.
Print BWs with True Color Pls.

After a bit of a snag, I have a beautiful 20x30 stretched canvas print. Only problem is I can't figure out how to mount the thing!
Any suggestions?
Thanks,
E
