The shootout 2008 not only allowed me to visit some of the most gorgeous places on earth but also meet some new friends. One of them was Aaron Newman, (anwmn1) who turned to be not only a great photogrpaher :bow but also a great cook :hotfood .
So we decided to start a new thread, in which we all would share some recipes, know-hows, etc.

Warning: unlike famous "Baldy, feed me" thread, this may not be necessarily a healthy diet and often will surely put your on a direct path to your heart attack;-) so enter at your own risk. :wink

Aaron is cooking his first recipe entry right now. Everybody is welcome to jump in, share, comment and, actually, try some and enjoy!:thumb

    Okay let me start off by saying I have never met anyone that likes steak as much as Nikolai. Everywhere we stopped for dinner he wanted steak. It was tough to get him to try something different but we did manage to get him to have his first Indian Fry Bread while at Canyon De Chelly. deal.gif



    Okay on to the steak skewers I made while we were camping on the Paria Plateau West of Page AZ.

    I had picked up some Carne Asada Beef earlier in the week which I had cut into strips before packing in the ice chest. To make the skewers even better I added onion, a jalapeno, and soy sauce as a marinade while we were setting up our camp site.

    The beef was then skewered and cooked to medium rare over a small camp stove which Kdog had brought along. The dipping sauce for these was a mixture of diced onion, jalapeno, and soy sauce. The sauce is very simple and works with any meat and most vegetables.

    Easy dish that can work for backyard BBQ's or camping. :D

    Ooh I like the sound of this, here's one of my favourite easy pasta recipes, it's healthy, well it's got vegetables in it.

    For 2 people

    Take a huge hunk of butter, about 50g and melt it in a wide pan. Chuck in some streaky bacon cut into squares, 3-4 rashers per person.

    Whilst it's cooking in the butter chop some leeks, again, 3-4 per person depending on size, it's best to half them lengthwise first and then chop slices approx quarter of an inch.

    When the bacon is starting to golden throw in all the leeks, they'll soak about the butter and fat from the bacon. Cook them on a low heat until you can mush them in your fingers, 30-45 mins, stir occasionally between beers.

    Also during this period put your salt and water on for your pasta and depending on the cooking time cook so it's ready when your leeks have cooked.

    Add a load of salt and pepper to the leeks and bacon and then a cup or two of double cream, bring the cream back to the boil and stir until thickened.

    Then add your drained pasta and serve with ciabatta soaked in extra virgin olive oil, rubbed with garlic if you like.

    A great warm bowl of comforting pasta for a cold wet evening.

    Nik - Carne Asada
    Nik,

    The meat you would buy here for Carne Asada would be called Skirt Steak. It's a great cut of meat. Best purchased at Gelson's or Bristol Farms so that they skin it. Not an easy cut to cook because it can get tough if not cooked right - but one of my favorite cuts of meat. (My dad and grandfather's both were in the wholesale meat business).

    I'm going to subscribe too. I am a carnivore and I have taken Cordon Bleu Cookling classes. Maybe we can blurb a cookbook out of this thread.

    I will have to think about a recipe or two to add.

    Can't beat pancakes for breakfast. Any recipe that makes for a thicker batter is probably fine, blueberries or banana can be used to mix things up a bit. Yummy!

    Which reminds me. There is nothing like chocolate bananas for grill desserts. What you do is put some bananas on the grill and heat them until they are very soft. Then pull them out, cut open right through the skin all the way to the skin on the other side, but don't split it. Fill to the brim with milk chocolate. Let it melt and have at it with a spoon.

    Okay here is another thing I brought along on the trip which didn't seem to get any complaints.

    Homemade Beef Jerky!!

    I vary on the cut of meat I use but the recipe is usually the same.
    Cut the meat into thin strips 1/8" to 1/4" (or as best you can manage)
    Marinade in Soy Sauce- fresh minced garlic- & chopped onion for 1-3 hours
    Pat the meat dry and then sprinkle a mix of seasoning salt and chili powder
    Use a dehydrator and dry the meat for 12-20 hours depending on thickness of cut and personal taste.

    Jalapeno Poppers-


    Cut the stem of the Jalapeno off and then cut the Jalapeno in half long ways
    With a paring knife remove the veins and seeds from the peppers
    Fill each half with regular cream cheese (not whipped- it will be a huge mess)
    Wrap each half with a piece of bacon and use a tooth pick to hold the bacon in place
    Grill until the bacon is cooked


    These are not healthy but people eat them up in a hurry! :D

    She loves beef jerky since it's very expensive back in Oz.

    Just recieved a call from a co-worker that is on vacation this week and spent a long weekend in Puerto Penasco (Rocky Point) Mexico. She brought me back 8 lbs. of fresh shrimp that I will pick up tomorrow. wings.gif


    I will be making some Tequilla Lime Shrimp this weekend.:eat
    I try to remember to take pics of all the steps and the finished dinner. mwink.gif

    Just set your camera on a tripod and make it take one picture a minute (Oly can do this, right?;-) This should be plenty to get you 10-12 keepers.

    I just realized that all I've eaten today is dessert after dessert. It was a good day.

    Made some Czech style apple pie today with friends, it didn't turn out too pretty, but yum!

    Hey, this thread is a surprise! I didn't expect to find a recipe thread tucked away in this little obscure part of dGrin that I am just visiting for the first time! What 's the connection with Wide Angle and Big Picture? headscratch.gif Oh, I get it, wide and big after trying all the recipes clap.gif

    I love great food, and I'm skinny :D

    But I usually eat only what I cook, hardly ever at restaurants etc. And I usually eat-cook only what comes directly to me from nature via the primary producer.

    I live and work in Saudi Arabia. So here is a dessert which has dates. Simple, elegant and perfect.

    Find some fresh ripe dates (not the dried, pressed kind). They will be large, dark, smooth and tender skinned, plump and moist. Get enough for four dates per person. Remove the seed and cut them in half longwise. Put all the pieces in a shallow bowl and sprinkle them liberally with DOM Benedictine. Soak them for at least an hour, adding a little more liquor as it is absorbed.

    Serve the marinated date pieces with remaining marinade, in individual bowls, on top of scoops of the best quality creamy natural vanilla icecream. Strew shavings of high quality 75% dark chocolate (eg Lintz) over all, and top each mound with a crystallised violet.

    I call this unique creation Sheherezade.

    OMG - that sounds amazing!!! I love ice cream (especially vanilla - my brother calls me crazy), dates, liquors, and chocolate - sounds like the perfect combination to me!!!
