D60 bracketing

Before knowing what it was I purchased a Nikon D60 without knowing that it didnt have bracketing. Shooting HDR is a little harder because of having to change the exposure myself. Does anyone have any hints or tips in to achieving a good HDR shot doing it manually? The main problem I run into is that I cant capture a minimum of 3 shots before the clouds move.
