I certainly can understand your view, I guess my take on IR is, you set the white balance to be white on Foliage and trees and generally anything in that color range. So when I am doing my post processing, I like blue skies, and some color in the image, but the main things that keep it "IR" in a sense stays white in processing or a golden color, which they don't really have a color range unless you purposely, physically color it, and it's not changing due to color swap.
I taught/learned this along time ago, and it's served me well, Photography, like most everything else is "Subjective" and open for interpretation by everyone. I know IR isn't for everyone, and "Colorized" IR is even less appealing to a lot of folks, but I like it:D
