How do you set a pic as the title thumb for the gallery?

I know how to do this when I upload, but how do you change the title thumb once the gallery or pic uploaded? I can't seem to find how to do it. I have a daily photo gallery and I want to set the newest photo as the title thumb.

You'll need to set a new photo each day since the options are a single photo or random photos.

... Can't get much easier than that! And you know, I saw that setting and never bothered to try it to see if that was it.
