Camera Date/Time...

So I have my date and time set correctly on my new 50D and I've noticed that when I take photos in the span of one day and upload them to my computer, it will create two folders for two different dates. I'm pretty sure that one folder is the previous day and the other folder is the current day. I thought it might be because if I set it for 3pm, it's actually set for 3am, so the camera will think at noon it's actually mid night, but I've checked that multiple times and the time is right where it needs to be (with the exception of just now, I hadn't adjusted it for DST yet, but even then it was only one hour off.
So does anyone have any idea on why it would be doing this and what to do to fix it? It is rather annoying for my very specific editing process.
