Time lapse with 5D or Rebel XT?

Hi- I have a stupid question, and though I have read my manual I can't find what I am looking for.
Scenario is this: My silly, but adorable 2n'd grader is wanting to know if Santa is for real. **
So, in this tech age, her idea of the perfect way to resolve this issue in her mind is to do a mythbusters... on Santa. She wants to set up optimum conditions for her experiment (cookies & milk with parents vowing not to touch them) and a time lapse camera set up on tripod to record through Christmas Eve night.
Can my 1st gen. 5D do that? How about my old Rebel XT?
Got any ideas on how to get it done if that doesn't work?

The other option is to shoot tethered to a laptop. The software to do this came with your camera and has an inverval mode with no shot limit. As an added bonus you don't need to worry about running out of space on your card. I found this with a quick google search:
