Broken Thumbnail images when scanning

Hello All,
I am having a problem scanning old photos. Sometimes the thumbnail image appears "broken" Here are the Facts of the case:
- Scanner Epson V700
- Computer Macbook
- OS: OSX
- Scanner settings: 600dpi with .jpg compression set at 16 (1 being highest quality)
- Frequency: It seems to happen about 10% of the time, sometimes I can rescan it and the new image will have a correct thumbnail, sometimes I rescan it several times and it does not fix the thumbnail.
