Moving On up
Well I have been playing with film for years, I still love my inherited 1985 Leica M6 with a 35mm Summicron ASPH and a 90mm APO Summicron. I also have my complement of F3, F5. F6 Nikons and AF 35-70 f/2.8, AF-ED 80-200 f/2.8, AF300 f/2.8 ED-IF,, 400 mm f/3.5 Nikkor ED-IF, 24 28 f/2.8 AIS, 85 f/1.4, D IF , TC-14E, and did purchase a D70s many moons ago but still loved my slide film. I love wildlife and landscapes and was looking at the D300 or the D700. Since I have a good complement of FF lens I think either camera will support my needs, but I am leaning towards the D700. D300 more pixel density plus the autofocus sensors would support my wildlife action pictures. D700 ISO 200-6400 for those early and late afternoon shoots, slightly faster autofocus performance and the image quality could be better, White balance might have an advantage from what I have read. Why not the D3, I just don't see the need to jump to the D3. So D300 or D700. Your opinions are welcome.

Between the D300 and the D700 I do think that the D700 will give you the closest experience to what you have now. The D300 would make a better "compliment" to what you have now, in that it would provide the longer reach as necessary.
I could make a more substantive argument either way but first, why are you considering digital beyond the D70s?
Is the D70s deficient in some way?
Will you be keeping the film cameras?

I've got both. I love them both. What I like most about the D700, besides the incredible low light capability compared to the other Nikon DSLRS I own,
Is the FF. I screw on that 35-70 2.8f you mention and the whole world opens up. That same lens on my D300 feels like I am not far away enough from my target...unless its a 3/4 length or headshot.
But both cams are really good. I can get reliably decent photos on the D300 up to about 2k ISO. The D700 will deliver a better photo at even higher ISO.
But for me, its that angle of view I love about the D700.
I still have a couple of D70s' also. That is one fine camera! If not for the smallish rear display combined with my presb:cryyopia I'd be just fine with that cam totally, save for higher ISO work.
Also, lately I've been shooting Auto mode for WB...and it seems to be darned close.

Like I said before, the D700 will give you a more similar experience with your existing lenses with regard to FOV, as compared to the film cameras.
The D300 will add the 1.5x crop factor, but it's not quite as good for extremely high ISOs (but neither is film.)

BTW: In everything I've seen dense sensors = more noise.
