Caught off Guard

I'd love some advice with this shot. It was about 10 minutes before sunset and I heard the birds coming from behind me. I had my 70mm - 300mm sigma and was shooting in Shutter Priority. 400 ISO. The shot was hand held.

I turned, zoomed to 300mm and focused in on the birds and followed until they flew by the moon. The picture isn't very sharp, I'm sure that's because of my movement and the lighting.

I'm kicking myself that I didn't focus on the moon, pin my arms somewhere to steady myself and wait for the birds to fly across. I think I got too anxious.

Faced with a similar scenario what would you have done?
