I cleaned most of it out, because I thought it was worth the effort.

Yep, it probably is a grouper. However, the sign said white bass. But that's directly translated from Dutch .
I'll have a look next time for its latin name.
Then again, groupers are bass...
edit: Did some lookups. Turns out the English name for this in dutch called 'white bass' is... (drumroll) 'black grouper' !
