No tricks - just a lot of practice.
Using flash will give sharper looking shots because of the higher contrast, plus I tend to use fairly open apertures to avoid diffraction softening and then get the "missing" DOF back again using focus stacking.

Basically it's taking a series of shots at different focus depths and combining them into one pic.

The wings just don't look strong enough to lift the size of the body and head of those Drones they're boofy looking aren't they.
I wonder if the smaller Hover Flies just get out of the way at the sight of them

Yes these hovers will sometimes bounce other hovers out the way but not as bad as some of the territorial flower bees.
