I would rather a customer (should I be so lucky :rolleyes) not have any of the crop options, but to have to get the image with a white border if the size they choose is not congruent with print size.

How can I turn those options off?

    If you are shooting in a format that gives you a 1.5:1 (4x6, 8x12, 10x15, etc.) image ratio, only offer prints in those sizes. No cropping necessary.

    You can't turn it off - but you can set Proof Delay ON so that all orders stop with you first, so you can check crops and re-adjust as needed.
