Royce --- You have some great, hard-to-get shots there. You're lucky to live in a place with such great opportunities. I have just a few C&Cs.
    1. Try to get the whole animal in the frame. Because it is natural to focus your attention and the camera on the center of the frame (putting the animal's head in the center), this is hard to do. But look at the outlying parts of the animal, too. In this case, it's the hooves. I usually use spot focus on the animal's eye, then holding that focus I move the camera to make a good composition.
    2. On composition: shift way from putting the animal's head in the center, and crop out the parts that distract from the subject of the photo.
    3. Maybe someone else has some good ideas for adjusting the lighting to get better contrast against the background. One thing to do is use a larger aperature to shorten the depth of field. This would blur the background and make the animal stand out more.

Here's a very rough example from your second photo to illustrate (ignore the color shift):

Thanks John, your coments are really appreciated.
I admit I got into to big of a hurry and cut the legs.
I have just started using full manual for shooting and I may have been better served using ap priority. This may have helped with my colors. I'll try the better DOF next time as well.
Thanks to you as well Jack!
