Technique name for Color and B/w Mix in same shot

Smuggers-

I am a LR 2.0 user and am trying to learn the technique where you make a photo grayscale- yet you take 1 element/part of the photo and add color to one aspect of the image. For example, if I shoot a girl holding flowers.. how do I make the image b/w- yet keep the red of the rose in the image.

Does this require masking?

I see this technique used often- but not sure what this is referred to? (hence, I didn't know what to search on....)

Appreciate any guidance.
