Move multiple galleries?

I'm in the process of changing and updating my site and need to move multiple galleries into a new gallery.
An example would be-
Category/Subcategory/gallery
I want to move to
Category/subcategory
The end result will be that my Nav bar will have a Portfolio link that goes to only the portfolio galleries, and the galleries link will go only to the "new" gallery.
Anyone have any bright ideas?
