I did some trials at home and then went camping, the nights were really dry so I was happy to leave my camera out all night. Taken with a canon 40d and 10-22mm lens 1 shot every 30 seconds from about 4pm till 2am.

You'll need an "intervalometer" that attaches to a port on your camera and sends it a signal every few seconds to open the shutter. (you can assign this setting)
There are a few available on the market...I'm trying to remember the name of the one I have, it's been quite a while since I've used it.

I'm using the canon cable remote, set to take a shot every 30 seconds indefinitely (battery ran out at about 3am, I think). I did leave the camera out but felt it was safe as it's a very secluded camping spot that only a few of us know about and with no dew or moisture the night before I was confident the camera would be ok. We primarily head here for the rock climbing. After you have all your shots I ran it through photoshop with an action to crop it to 16x9, add the border and exif info. Then on to quicktime which compiles a video from sequentially numbered stills. Finally its a quick conversion to a format that youtube likes.
And by the "canon cable remote", I'm guessing you're talking about the timer control remote?

It is the timer remote and its a very handy device.
Settings wise I let the camera handle everything except focus. The only option I chose was 'no flash'. With going from full daylight to dark to a full moon then to night time it wasn't worth me trying to force an ISO or shutter speed etc.

It's probably worth asking again... did you use a consistant shutter speed / appature / ISO for all the shots or did you somehow adjust it? I would have thought the changing light throughout the day (and night) would have presented some significant challenges to getting the exposure right.

The camera is basically set to Auto, with no flash. The camera selects ISO, shutter and aperture all on its own. Then just manual focus so it doesn't go searching for something to focus on during the night shots.
