Just wondering if there was a way to sort my categories.

Example

I have concert shots broken down into different venues and would like some of them to stay toward the top of the page instead of being moved down when i load a picture to another one

Sure, you can set your homepage to 'sort galleries by position'. That would allow you to arrange the categories or galleries on your homepage and any category / subcategory page using the 'arrange' link that then shows at the top of the thumbnails box. Read more about it here.
