Help with jpg compression, changing dpi and number of pixels!!!

So I'm very very new to digital.
I have a portfolio that I will be submitting in a few days to a young photographers' competition. The problem is I can't seem to get my images to fit the competition requirements.
They require that "Images must be uploaded or submitted on a CD or DVD as JPEG files with 8-10 compression. Image resolution must be 100 dpi and cannot exceed 1000 pixels on the longest side."
Currently I only have my photos in iphoto on our mac. Through iphoto I have found how to export the images and reduce the pixels to 1000. However, I can find nothing indicating JPEG compression of 8-10 or of adjusting dpi to 100.
I have tried to figure this out through apple.com, and through iphoto, and I have even looked on my friend's photoshop, all to no avail.
So please help, am I just totally a fool about these things? Is there something obvious that I'm missing?

In iPhoto, there's no way to set DPI as far as I can tell. The JPG compression of 8-10 is a Photoshop term, but in iPhoto through the Export dialog setting the JPG quality of High is about equal. And of course you've already found how to resize the pixel dimensions there so your longest side is 1000 px or less.
In Photoshop, you can set all of these by going to Image>Image Size There you'll be able to resize the image in pixels, set the DPI/Resolution, then when you Save As... JPG you'll be able to choose the JPG quality anywhere from 1 to 12, with 8-10 being lab quality.
