Help with choosing the pics in Galleries!

I'd love to hear some tips on selecting which pics you decide to place in galleries.
If you're making a port to show off your work, do you limit the gallery to a certain amount of pics?
If you take pics at an event for potential sales or, many different people/subjects, do you post as many pics as you can to try to maximize your sales?.
