I currently have SubCategories in my portfolio Category that contain images from different events:

Would it be better to have one Gallery for Dance and Theater and put all these in it? (Less clicks) I would then do the same for Sports Images etc.

I would keep it as is because it seems more organized. Your clients aren't going to know that they are supposed to go into the Sports gallery then go to page 3 or 5 or whatever it is. Especially because the number of pages you have in a gallery can change depending on how large their browser is. You could experiment with it but it seems like a lot of work to me, with very little benefit.
