Can I make Gallary Display Pictures not Randomized?

I don't like the feature when the photos just random... Is it possible to set a single picture for categories/and gallaries... just like flickr for example, how one picture is for display for a set.

let me know if this can or can't be done, thanks in advance.

You can set a feature photo for each gallery. The feature photo for the first gallery in the category will be shown for the category.
