Still learning in Maui... C+C please

I recently got back from a family vacation to Maui. I believe I'm having a hard time deciding which metering mode to be in. I had a lot of shots where the exposure seemed to be off. I'm posting what I think are some of the better shots of trip and perhaps I'll throw in an example of where I think I need help.

    :D Really not seeing much of a problem here. Basically things look good
    to me.
    Compositions looks good. Color good.

    Thanks, here's one of the examples that I'm speaking of. It just looks like something is off, not sure if it's just the bright sunlight or what. Maybe this just isn't a keeper and I should move on. Perhaps I'm a little tentative and self conscience starting out.

    Sure. As is like this, it is disappointing. Whats going on and how to do
    anything about can be discussed at some length. I would suggest
    simply taking the photo / photos into image editing software and see what
    good things you can bring out of the shot. What the camera gave you here,
    for whatever reason, just needs some work.
    Straighten the horizon. Saturate the colors to your liking. Use the dodge tool to
    bring out some missing details in the close dark cliff and the person in the shot.
    Use levels in an effort to balance the dark and the bright into more pleasing.
    Then a slight crop to taste and you should have something more along the lines
    of what you may want.

    A quick pass in image editing finds a bit more potential in your picture for
    further consideration.
