64 bit, although you’ll need more than 3+ gigs of ram free to see any benefit. The more, the better with such app’s that support 64 bit.
More memory means better performance, usually. Note that Photoshop itself will not be 64-bit on the Mac till CS5, but I don't think you should have any problem mixing 64-bit LR with 32-bit PS.

I know I don't have any issues with this combination on both my desktop and laptop - though I'm running Win7 x64 not Mac.

I rarely use photoshop to be honest and I am still on CS2 because of that, so I'm okay with that not being 64 bit
