I have taken lots of great food photos for my catering business.
I put them on my website, and most ended up as thumbnail size.
I see the file size is 7.6KB, Dimension 100x100.
What have I done...and can I correct it?

Not unless you have the originals -

Somewhere along your editing path you disposed of most of your pixels. 100 by 100 pixels is tiny. And when they are gone, they are gone, no way to get all of the pixels back, unless you kept a copy of your original file somewhere. This may have occurred with inappropriate cropping or inappropriate settings when saving your uploaded file as a low res jpg. You will have to examine each step of your workflow to determine where the pixels vanished...

Most of my images online run at least ~5000 by 3000 or thereabouts for comparison.

can you describe your processing flow? how do you import your pictures, do you edit? what software? how do you export your photos, etc. There is porbably just menu setting in oine of your steps that you need to change is all.
