How to Delete Categories and Sub-categories

I have two questions really.

The first is how can I delete Galleries/Sub-Galleries? I'm having a real hard time getting my galleries set the way I want them on my site. I attended a week long event and shot thousands of photos. I want to have, on my home page, a Gallery using the name of the event, "28th Annual Joe Nall Fly In", that then leads to sub-galleries of images from the event (War Birds, Jets, Helicopters, etc., etc.), but I can't seem to get it in the right order when creating new galleries. The name of the event is happening later in the chain rather than up front so people know where to look. Now I've got Sub-categories in the wrong galleries and I can't delete them (only hide them) which won't allow me to use the gallery name again.

The second is how do I get the proper sequence of galleries loaded/created? As an example, I have a gallery titled "Airplanes" on my home page. When you click it, you're then taken to a page with other sub-galleries. That's what I want, but I can't remember how to do it! Help me please!

First let's make sure we're speaking the same terminology.

A category is a container object. It does not contain images, it only contains sub-categories or galleries.

A sub-category is a container object. It only contains galleries.

A gallery is the only thing that contains images. Every gallery must have a category. Sub-category is optional.

So, in your existing site the structure looks either like this:

    Airplanes (category)
    ....Rally of Eagles 2009 (gallery)

    or like this:

    Sports (category)
    ....CMSA Swim Meet (sub-category)
    ........CMSA Swim Meet (gallery)

You can create and delete categories or sub-categories in the control panel.

You can assign categories or sub-categories to your galleries in the gallery options page for each gallery. A category is mandatory. A sub-category is optional. In my opinion, you should only use a sub-category if you need an extra level of organization (because you have lots of galleries in different sub-categories). Otherwise, the sub-category just creates extra clicks for the user to get to your gallery which is not useful.
