What's the best and worst of Turkey?

We're heading off in 7 days for a 5 week trip around Turkey. I'll be taking a fair amount of photo gear. The only firm plans we have are 1. the first 5 days in Istanbul, 2. fly to Trabzon 3. get to Cappadocia somehow. We aim to get around to the Mediterranean and Aegean coast, but we're not sure about the territory around the Syrian border. Any thoughts or suggestions will be welcome.
