Stopped by the park with my new 7D to see if I can figure out all those AF settings :dunno (Meaning: how they react in the real world)
Anyone have some good links for that, or some good first-hand info?

Take lots of frames!
Really.
Use the center AF point for flying birds or large birds. Use spot AF point for perched or distant birds.
Because the bright sky is your BG mostly use spot metering and of course stay on your subject.
Keep shutter speeds up. After "golden hour" has passed...I find that ISO 500...+1/3 exposure compensation...F 6.3 a good place to start.
Of course use AI servo...unless you can find a "poser".
