A Few Sub-Category Questions

Hello,
I would like to change the following two things site-wide:
1.) Is it possible to have my Galleries appear above the Sub-Categories?
2.) Is is possible to rename the "Sub-Categories" to something like "Archives". (i.e. Springfield High School Archives).
Each of my categories is a school name. Inside each school category, I have sub-category folders for past school years that show up on top and then galleries of events from the current school year. For Example:
Springfield High School Sub-Categories
2009-2010 School Year
2008-2009 School Year
Springfield High School Galleries
2010 - 10/13 Springfield Homecoming Game
2010 - 10/02 Springfield Soccer
Any help in achieving these goals would be much appreciated!
