I use them (rarely) as a temporary label for my workflow. IOW, they change based on what I want to indicate for the document as I process the data. Red means Edit in Photoshop. Blue means ready to print etc. So I only label with colors some images that are in need of processing through the workflow, then at some point, they get a label color (green) for Printed (meaning I’m done).
I also use the colors to do a double filter. So I might create a collection of images from the same event, all of them keyworded, but I don't want to keyword NSFW on things. So they get the Blue Color. Then when I make updates to my digital picture frame at the office I have a filter/smart collection (highly rated and not blue color) that I export from for that frame.
