I was thinking about getting a focusing screen for my 7d to make it easier to judge manual focus, and I was wondering if anyone has any recommendations... I've never installed one before, so looking for advice... thanks

    Here is one...

I cannot provide any first hand recommendation on this screen but, have read some good reviews on it. It looks like the focusing screen I used on my manual focus Canon A-1 and AE-1P film cameras.

IMO, a split image is the easiest screen with which to manually focus...

Read all of the information about that focus screen. It can affect exposure up to -1.6EV in some conditions.

The prism is also limited to the center so focus and recompose may be required, which will affect focus accuracy.

Live view allows you to use the entire image area and is potentially much more accurate if you use magnification of the area of prime focus.
