Hipstamatic -- for what it's worth, I really like the new C-type film.
6x6 -- another square format app. Takes super sharp photos even on my crappy 3gs.
Camera Awesome -- SmugMug's app
Snapseed -- my favorite app for processing photos on both iphone and ipad. Makes it easy to crop, straighten, dodge/burn, apply filters and export. I also use this to process DSLR photos on my ipad.
PureShot -- still getting to know. It's intended as replacement for native camera and can save photos in TIFF format for later processing. Seems pretty good. And it was cheap.
Flickr -- if you're on Flickr, the new app is good for taking photos, applying basic filter, uploading and viewing both yours and others photostream.

Give 645 Pro a try, it offers exposure adjustments. I haven't tried it myself, but it gets lots of good reviews:
