Is there a way to include the same photo file in more than one gallery -- I mean, aside from making a copy of it? I want to be able to have more than one gallery reference the exact same image (so if I change it once, all the galleries that use it get the change). Doable?

Not doable. You COULD set something similar up using keywords though. Make all of the pics you want in the gallery have the same keyword, then link to the keyword.
