How do you make the background white? .. I mean like over exposing so the object/person is the only thing you see, the rest is white...

you have no other option then masking the subject/ person and copy/paste it onto a white background
if the original background is equally toned [ no detail like trees or building ]
then you might select that [ color range in photoshop ] and replace w white color

As a rule, the simpler the subject matter, and the simpler the background, the easier it is to remove the background. For the subject, feathers, fur, hair and shallow DOF can all greatly complicate the accurate selection of the subject.
Once the background is removed, it's relatively easy to add a new background in whatever shade or gradient, but blending the subject to the new background can still be difficult to do convincingly.
Larger print and larger display sizes complicate everything, because it allows closer scrutiny and can easily destroy the illusion of the background removal.

part of the simplification is getting as much of what you want straight into your camera. Such as the photo I attached below. I was looking for this effect early on and found a site that showed how to get that effect in real time. I made a simple frame out of pvc pipe and then bought some white rip stop nylon. Placed the whole of it in front of the late day Sun, had my model stand blocking the direct Sun..added a bit of front light to help, and voila~
much easier to get what you want from this beginning.
