How to manually focus a fisheye lens?

Hi,
I bought a Peleng 8mm fisheye for my 10D a few months back on eBay. It's a great cheap lens, nothing super sharp but enough for fun pictures. My problem with this lens is the focusing. Since there is no focuing screen like on a manual camera it's really hard to focus with my 10D.
Is there any trick to focusing a fisheye? I know if you stop down most everything is in fouus but I have taken a few shots that were in bright sunlight but still very out of foucs. Any tips or suggestions are welcome!
