What Might I be Missing???
I have the D7000 and several lenses. This post deals with my D7000 and the Nikon 70-300 VR and the Tamron 70-200 f2.8. I also have the KENKO Teleplus Pro 300 DGX 1.4 TC that I use with my Tamron lens with, what I think are very good results. I rarely use the Nikon lens and am considering selling it.
My reasoning is that I feel the IQ of the pictures taken with the Tamron and Kenko TC are as good or possibly better than the Nikon. I know the Nikon has VR, but the Tamron is a faster lens.
I would appreciate any comments and ideas that you may offer.

How many photographers does it take to change a light bulb? 50. One to change the bulb, and forty-nine to say, "I could have done that better!"
The Nikkor 70-300mm, f4.5-f5.6G IF-ED AF-S VR is certainly a fine zoom lens, and you will be giving up convenience, but it sounds like you have priorities beyond convenience.
It's great that the combination of Tamron 70-200mm f/2.8 Di LD (IF) Macro and Kenko Teleplus PRO 300 DGX 1.4x is working well for you. It does seem that that version teleconverter appears to mount the Nikkor 70-300mm VR as well, so you might try that combination once before you sell the Nikkor.
