If on a bright, sunny day (no clouds) the subject of the photo is in the shade and the camera is in the bright sunlight, should the WB be set to daylight or shade?

Usually I go with the subject.
If you have lightroom 4, you can make local white balance adjustments with a brush.
I will typically let the camera decide on auto WB when outside, and make adjustments in post if necessary.
You may find "shade" to be too amber though in the conditions that your are describing and something in between (cloudy) may work better for you.
