Is there a better way to do this?
I have a category with 11 subcategories and a total of 36 galleries. What I want to do is make the whole category unlisted and then create either a single smart gallery in a different gallery or an event and pull just a few of the images into it. In other words I want to keep these guys, but for public consumption, I only want to display only a few.
The only method I can see is to change settings on multiple galleries and add each one to the list. This is very time consuming since I can't select a whole category or sub-category to change, have to identify each one. And of course the drop down hides the list I'm working on. Plus I worry that SM will time out on me before I get to the end.
Any suggestions on a better way to do this?

The method you are suggesting will work fine. With the galleries being unlisted, the photos in the smart galleries will not link back to the unlisted galleries.
You would need to go through and mark all of those galleries as unlisted and use the Multiple Galleries tool to do that. It shouldn't take too long, and you shouldn't have to worry about timing out.
