Site-wide gallery style setting

Apologies if it's been answered or is obvious, but how do you set a site-wide gallery style (like collage landscape)?

    If you go to Customize > Customize Site, click the Settings button at the top of the page to edit the Design settings. You can set a default gallery style here :)

    Doesn't this only set the style for galleries that don't have another style already selected? Is there a way to reset ALL galleries to respect the site-wide default set in this way?
