Text font size color confusion?

Can someone help a dinosaur? I'm still sandboxing, close to unviel, now fighting confusion over text and fonts.
In my Theme controls I see selctions for Text Color, Accent Color, Heading Font, Heading Font Weight, and Body Font.
The Heading and Body Font selctions show a drop down list of fonts that look like an alien invasion. I see that they all come from Google, but where are the usual suspects? If you ask the experts what fonts are best for websites you get the old standbys: Arial, Times New Roman, Tahoma, Garamond, Helvetica, etc. NONE of these show up in the Smugmug/Google list. What's that all about?
The Heading Font Weight shows "Normal 400" and no other options. So I cycle the Theme through a few while watching a text block on my About page. They are all iti-bity fonts. How can I make a text block font big enough for old folks like me to read without putting our nose on the screen?
I set my Accent Color to black, but all my links in my menu still come out a muted gray, not black. Is that a bug or a feature?
I see in the New Customization forum a lot of suggestions to abandon text blocks and use HTML blocks instead to add text. Is that the only way to have basic control of font, size, color?
