What am I locking myself into if I choose one site design over another?

I cannot tell by looking at the thumbnails of the different site designs, what I'm locking myself into by choosing one over the other.
Is there a list somewhere of what the format differences are that one cannot modify, for each site design?
And by the process of elimination, what one *can* modify?
Example criteria: content, theme customization details, layout parameters, colors of (xyz), entire site, homepage, folders, galleries, pages, HTML, CSS, navbar format options, etc.
The deeper I go into customizing, the more painful it will be if I come up against a problem that can't be fixed because of the theme I chose.
There is hopefully a chart along these lines but with much more detail and also what the limits might be, such as, background must be grey, or white, etc.
