How can I change the size and/or color of a specific line of text within a paragraph in a text box?

Color is not something you can change in a text box. You'd need to switch to HTML.
Size you can change. Highlight the section you want to change, and then click at the top in either the Heading dropdown list, or the Text size dropdown box, and choose which you want.

If you opt for a header, the font choice will revert to what you chose in your main theme as the main font. The other group of font pt sizes, adopts the font choice of the 2ndary body font you chose.

You may need to watch your cursor location, that you have clicked into the text box text properly. It was a little buggy but a recent update seems to have fixed it.
