What dimensions should I start out in photoshop for a banner for my current website? I plan to not only put my current "jim Yeager Phtography" but also my phone number and possibly some pictures and backgrounds.

I'd suggest keeping it under 1024 pixels wide. But at the same time unless you set the image to be a specific width it should adjust to fit the width of your and your customers browser windows.
