Moving pics to another gallery

Aplogies if this has been covered. I did a quick search but couldn't find it so here goes.
Under the legacy layout, in tools, multiple images, you used to be able to select a number of images then send them to a brand new gallery. I can't see how to do that under the new layout.
Example, I've shot a bunch of images including 3 different sets and all the images are in one unlisted gallery. I now want to publish the images from set 1.
In the past I'd go to multiple images, select them, then move to new gallery, a box would open to create that gallery, done.
I know I can do the smart share thing and "collect", but I want to move them and create a new gallery.
Am I missing something obvious?
Still getting the hang of how the new layout works.
One more while I'm at it. When setting things for the whole site, is there any way I can set things so every gallery uses Original size and not square thumbnails, or set that as a default?

Create a new gallery where you want it
Go to gallery that contains the photos you want to move, select the ones you want
Drag and drop into the new gallery you created

With the new way of doing things and being so ingrained in the old way, didn't even occur to me to drag and drop!
